Zambrero has appointed three development agents for Greater London and set a target of 36 new sites within three years. The Australian-founded Mexican food brand, which reports 17 UK sites, is aiming for 100 across the country by 2030, and says the London plan would create about 540 jobs, one of the faster-growing restaurant franchises recruiting in the UK.
Zambrero announced the appointments on 30 September 2026. The three agents, Charles Stewart, Chris Seymour and Matt King, bring more than 45 years of combined experience in franchising, operations and business development.
They will start in central London, focusing on Victoria, Southbank, Westminster, Paddington and the City, before moving to wider boroughs.
Where the network stands
Retail Times lists 17 Zambrero sites, spread across London, Manchester, Birmingham, Reading, Essex, Hampshire, Northampton and Glasgow, a counter-service format that competes with the fast food franchises recruiting in the UK.
In July, trade coverage put the estate at 16 restaurants and reported 14 franchise partners signed in the first year of the UK programme, with a target of 35 franchise partners by the end of 2026. The same coverage reported like-for-like sales up 28% over 12 months, and said the Glasgow West End restaurant was the brand’s first in Scotland.
A regional agent model
The London appointments follow earlier ones elsewhere. Damian Bennett and Dawn Catherall cover Greater Manchester and West Yorkshire, Sumin Lohani covers Hampshire, Berkshire and the Isle of Wight, and three agents cover the West Midlands and South West.
Each patch gives the brand a named person for franchisee recruitment in that area. Stewart said the brand’s strength and purpose, and the scale of the opportunity, drew him to the role.
What the targets imply
Reaching 100 sites by 2030 from a base of 17 implies more than 80 further openings in about four years, and 36 of them are earmarked for London. The brand has forecast up to 10 openings in 2026 and 30 sites in 2027 in earlier statements.
Network size is the franchisor’s own claim, since no UK register records franchised outlet counts, so each figure is best read as a target that the brand reports about itself, unlike the terms brands publish across the UK franchise directory.
London is the only area for which the announcement gives a site target, and the agents’ start dates and first sites were not stated.
