A Fireaway franchise is a British stone-fired pizza business built around an open kitchen, and the brand has grown to more than 160 UK stores in under a decade.

Mario Aleppo founded Fireaway in 2016 with a single store in Rosehill, Sutton, south London. The company is now headquartered in Milton Keynes and employs over 1,000 people, with international stores in Amsterdam, Spain and the Cayman Islands and further sites under construction in Turkey and Portugal.

The recipe traces to the founder’s grandmother, who brought it from the Amalfi Coast in 1950. Dough is made on site from Naples flour and left to rise overnight, and core products including buffalo mozzarella, plum tomatoes and cannoli are shipped from Italy weekly. Handmade stone-fired ovens, built for Fireaway by a family-run company in Rome, cook each pizza in 180 seconds.
