Founded in 1990, Flam’s is the leader in flammekueche catering. This traditional dish from northern Alsace dates back several hundred years. Made with a thin bread dough, a base of crême fraiche and fromage blanc, and garnished with onions and lardons for the traditional recipe, this is a gourmet dish that everyone loves.
Served on a wooden board, flammekuche is placed in the center of the table as soon as it comes out of the oven, and is shared between guests, who traditionally eat it with their fingers. Then a new flammekueche replaces the previous one, allowing you to continue eating hot and sampling different fillings.
Flammekueche’s fame has now spread far beyond the borders of Alsace, thanks in large part to Flam’s, which has popularized this age-old tradition. Particularly well-suited to the needs of young people in evening slots, with particular expertise in catering for large tables and groups. Employing mostly part-time staff, Flam’s is not affected by the current crisis in the restaurant industry.
At lunchtime, the fast service, express formulas and adapted prices are sure to win over the clientele of working people in a hurry. Family customers are attracted by the simplicity of the products and their success with children. Our original, authentic products, combined with our young management team, have enabled us to maintain a strong, distinctive brand identity over the past 30 years.
Today, Flam’s is looking to accelerate its development, with a priority focus on high-density towns, with the aim of opening 3 to 5 outlets a year.
2 types of profile
1) “Individual” profile: likes customer contact, enjoys managing teams and is a good organizer. Ideally, he’s already managed a profit center, has at least a little experience in the restaurant business (restaurant job in his youth), has €150,000 in equity and will be working in his own outlet.
2) Multi-franchisee catering profile: has restaurants that operate under the same name, is looking for quick returns, prefers simple processes, knows how to market, can train a manager and monitor him on a daily basis, is willing to train himself in Flam’s management.
