Chicken Salad Chick has signed its largest franchise deal in brand history: a 25-unit agreement covering five markets across Upstate New York, including Albany, Buffalo, Rochester, Syracuse, and the Upper Hudson Valley. The fast-casual franchise company, which operates more than 330 restaurants across 22 states, continues its northward push beyond its traditional Southern stronghold..

Founded in 2008 in Auburn, Alabama, Chicken Salad Chick built its reputation on an all-day chicken salad franchise concept targeting the fast-casual lunch segment. The brand began franchising in 2012 and has since expanded to more than 330 locations across 22 states, concentrated primarily in the Southeast and Mid-Atlantic. This latest deal marks the brand’s most significant single franchise commitment on record and extends its footprint into a region where it has had little prior presence.

The 25-unit agreement covers five distinct markets: Albany, Buffalo, Rochester, Syracuse, and the Upper Hudson Valley. The identity of the franchisee was not disclosed. Franchise Times, which first reported the deal, characterized it as the largest single franchise agreement in Chicken Salad Chick’s history. The arrangement follows the brand’s established area development model, under which operators commit to opening multiple locations within a defined territory over a set timeline.

Chicken Salad Chick has historically been concentrated in Southern states, where brand recognition is strongest. Entry into Upstate New York represents a shift toward Northern markets where the fast-casual chicken salad format is less established. The five target markets collectively cover a substantial portion of New York State outside the New York City metro area, a geography that several regional fast-casual brands have identified as underpenetrated in recent years. Buffalo, Rochester, and Syracuse each anchor mid-sized urban markets with distinct consumer demographics.

The fast-casual chicken segment has seen consistent franchising activity over the past several years, with operators across formats competing for real estate and qualified franchisees. Chicken Salad Chick occupies a distinct niche within that segment: its menu centers on chicken salad variations served across breakfast and lunch dayparts, a format that differentiates it from chicken sandwich or rotisserie-focused competitors. The brand’s positioning around the all-day lunch occasion is a factor area developers commonly reference when evaluating new territories outside the brand’s home region.
