Birdcall Signs 5-Unit Franchise Deal in Indianapolis, Eyes 100 Midwest Locations

Colorado-based fast casual franchise brand Birdcall signed a five-unit franchise agreement for the greater Indianapolis area on July 22, 2026, marking its first franchise development deal in the Midwest. The agreement is part of a regional expansion plan that targets nearly 100 locations across six states over the next five years.

Founded in Colorado, Birdcall has built its concept around all-natural chicken, self-order kiosk technology, and a menu that includes eight signature sandwiches, hand-cut tenders, gluten-free nuggets, and house-made sauces. The brand currently operates 17 restaurants across Colorado, Arizona, and Texas, with more than 20 additional locations in various stages of development nationwide. Its first franchised restaurant is expected to open in Starkville, Mississippi in the coming months.

The Indianapolis agreement covers the broader metro area, with active site selection focused on the Carmel-Fishers-Westfield corridor and additional locations under consideration in the southern portion of the market. Justin Livingston, Vice President of Franchise Development at Birdcall, described the partnership as representative of the brand’s growth direction. “This partnership represents exactly where Birdcall is headed,” Livingston notes. “Nikunj has built an impressive business of his own and shares our passion for operational excellence and thoughtful growth.”

Leading the Indianapolis development is Nikunj Patel, a multi-unit franchise operator who currently owns several Nekter Juice Bar locations in the Chicagoland area. He is partnering with a multi-state restaurant group with experience developing and operating dozens of franchise locations across the Midwest. Patel cited a selective approach to brand partnerships as central to his decision. “Our team has developed and operated restaurants for years, and we’ve learned to be selective about the brands we invest in,” he says. “Birdcall stood out because it delivers on both sides of the equation.”

The Indianapolis deal is the first signed agreement in Birdcall’s Midwest franchise push, which targets Indiana, Kansas, Missouri, Nebraska, Ohio, and Wisconsin. The brand’s expansion model centers on multi-unit operators with existing regional infrastructure rather than single-unit first-time franchisees. Each new location is planned around Birdcall’s signature format: modern design, family-friendly dining room, self-order kiosks, and a menu anchored by all-natural chicken. The concept also includes draft beer, house-made margaritas, and a community engagement component through local nonprofit partnerships and school fundraiser programs.
