The Concept

Evergreens is a Seattle-born fast-casual restaurant brand specializing in customizable salads, wraps and warm bowls. Founded in 2012 by two childhood friends, the company opened its first restaurant in 2013 and has spent more than a decade developing its operating model before entering franchising. The concept focuses on fresh ingredients, chef-inspired recipes, customization and fast service.

The operating model is designed to be relatively simple compared with many traditional restaurant concepts. Evergreens targets 1,000–1,700-square-foot inline and end-cap locations and says its restaurants require no exhaust hood and no on-site cooking, while using limited on-site preparation. The company currently operates 14 company-owned locations in Washington and Oregon and is seeking franchise partners to expand into 12 Western states.

Evergreens’ current franchise strategy is explicitly multi-unit: franchisees must commit to developing at least two locations. The company is looking for operators with restaurant, food-service or multi-unit retail experience and requires $350,000+ in liquid capital.

Frequently Asked Questions

Evergreens estimates the initial investment at $649,000 to $1.1 million. The range reflects differences in location, restaurant size, construction, equipment and branding requirements. The initial franchise fee is $45,000.

Evergreens uses a relatively small restaurant footprint of approximately 1,000–1,700 square feet. The concept also does not require an exhaust hood or on-site cooking, which the company says helps create a streamlined operating and development model.

The company currently requires $350,000 or more in liquid capital. Evergreens does not publicly state a minimum net-worth requirement on its current franchise website.

Financial qualification is only one part of the selection process. Evergreens strongly prefers candidates with restaurant, food-service or multi-unit retail experience and wants franchisees to be actively involved in operating their locations. Each location must have a qualified hands-on operator.

The standard royalty rate is 5.5%. However, Evergreens has introduced a limited-time Founders Incentive for franchisees who sign their development agreement during 2026. Qualified locations opening in 2027 pay 3.5%, while those opening in 2028 pay 4.5%, before moving to the standard 5.5% rate.

The company says royalty fees support ongoing operational guidance, culinary and menu development, technology, training and franchisee support. A specific marketing-fund percentage is not currently published on the public franchise page.

Evergreens’ 2026 franchise materials report that the top half of company-owned restaurants generated average annual sales of more than $1.45 million in 2025, excluding airport locations. This information comes from the company’s Item 19 financial performance disclosure.

This should not be interpreted as a guaranteed franchisee revenue figure or as the average for the entire system. The figure specifically represents the upper half of company-owned restaurants, and individual franchise performance may vary.

Evergreens is not primarily targeting inexperienced single-unit franchisees. The current model requires a minimum commitment of two locations, and the company strongly prefers candidates who have experience operating or managing restaurants, food-service businesses or multi-unit retail concepts.

That said, a candidate does not necessarily have to personally manage every restaurant. Evergreens allows owners to appoint a qualified, hands-on operator for each location. The company provides 10 days of initial training for two to four people, on-site opening support and ongoing field support.
